We tried these Chicken Enchiladas for the first time last night and our mouths were wowed....best enchiladas I've had since my BYU days (Los Hermanos anyone?).

Just went to Los Hermanos the other day. There are definitely perks to being back in Happy Valley! I know this is late but, congrats on your little one!
Yum, I'll have to give these a try. The sauce is a little different than the one I make from scratch. Have you ever tried Sister Blackwelders vegetable enchiladas? They were served a few years ago (maybe just a year?) at a stake RS meeting. Holy Hannah they are amazing and a favorite around here. If you don't have the recipe (they passed it out that night) I'll email it to you. I love a good enchilada!!
