Better Late Than Never (Easter)

This year we tried something new. Saturday morning Sage woke up to gifts (a board game, a Magic Tree House book and some treats). She hunted for eggs and then we had a delicious Easter breakfast of Puffed Pancake with Strawberries. Later in the day Sage and I baked up rolls and chocolate cake. We enjoyed our Easter dinner that night and we were done. Come Sunday we had nothing to do all day but teach Sage about the true meaning of Easter.

And polish off that chocolate cake.

What’s your secret to raising all girls?
To keep the emotions down with girls, I just didn’t allow it. If they fought or screamed, it was handled right then. It they argued about something, they had to be the other one’s servant for the day. Depending on the problem -- we had to serve each other. We did time out. Our tub was time out, there’s nothing to do in a cold hard tub.

Hardest thing about motherhood?
I don’t think it’s hard, it’s just time. Spreading out your time equally and efficiently and being able to getting everything done—that’s the hard thing. But I think it’s just fun. I can’t imagine doing anything else.

Horseback Riding

Sage, Suko and Nicole

Sage looks forward all week to Fridays because Friday is her day for riding lessons. Much of the hour lesson is spent taking care of Suko, a 22-year-old pony. Sage brushes his coat, combs his mane, picks gunk out of his hoofs, "paints" his nails (varnish on his hoofs) and helps saddle him up. Her teacher, Nicole, is there to help every step of the way.

We love to see her so happy and excited and working so hard to take care of Suko.

Sunday Spot

On warm, beautiful Sundays like yesterday we head down to Laguna Beach to our very special spot. It's a park at the end of Laguna, never crowded, amazing views and it's so quiet....the perfect place for reading scriptures or the Ensign or the Friend. We spread our blanket, eat our snacks, nap and read.

Why I Love Shane- Part 4

It's late and I'm waiting up for Shane who's at DCS (That's Dead Chiropractic Society--a crazy bunch of chiros who get together and listen to awesome speakers talk hard core chiropractic philosophy---love it!). I hope he'll get home soon because I haven't had my fill of Shane time today. While I'm thinking of him I had to throw up this post.

Shane has a big fat photo album full of his mission pictures (Bacolod Phillipines Mission). He has some tales to tell...eating dog, monsoon season, living without running water....many a story of life in a third world country. Every night before bed Sage and Shane break out the album (it stays by her bed) and he tells her a "daddy mission story".

She loves his stories and I love it when she opens up the photo album the next day, shows me a photo and re-tells me the story.

Have You Been Here Yet?


I heard from some friends about an amazing event at the new Milkalicious Boutique...free baby carriers and lots of other goodies. I was bummed I missed it but I decided I'd still better check out the boutique and I'm glad I did! They call themselves a one stop shop for all of your nursing needs. They carry so many great products from baby lotions and herbal salves (good for nursing mamas) to awesome bras and baby carriers. AND they have a great playroom (Sage loved it) AND they have a nursing room...perfect!

Heavenly


{molten chocolate cake}

4 ounces bittersweet chocolate (I like 77%)
1/2 cup unsalted butter
3 egg yolks
1/4 cup sugar (I use a little less)
3 egg whites

Directions:
1. Lightly grease 3 ramekins with butter.
2. Melt the chocolate into the butter in a bowl (place it over a pot of simmering water) and let cool a bit.
3. Beat the egg yolks and sugar and mix into the chocolate.
4. Beat the egg whites in a bowl until they form soft peaks.
5. Fold the chocolate into the egg whites.
6. Pour the batter into the ramekins, no more than 2/3rds full.
7. Bake in a preheated 400F oven for 7-8 minutes. The outside will be set and possibly crack and the inside will still be liquid.
8. Let cool for a few minutes and then run a knife around the edges and tip onto a plate. Or eat it right out of the ramekin with a spoon.


P.S. For all you crazies like me (That's you Kass!) you can substitute Succanat or Rapadura for the white sugar.
